Today is National Soup Swap Day. When we read about this idea a few months ago, we decided we had to host one. The idea is simple, make some soup, put it in a freezable container and get together with a few friends to swap soup. You will be glad you did. There is nothing better than a warm bowl of soup on a cold winter day.

Soup Tips: Soups are better when made with homemade stock. To freeze extra soup, use an air-tight container and be sure to leave a little extra space at the top for the liquid to expand. Brothy soup tends to freeze better than creamy because soups with dairy products are likely to curdle when reheated. Starchy soups (those with pasta and rice) can get a bit mushy when reheated or overcooked.
