And for drinking that wine, discard the old adage to “refrigerate all whites and serve reds at current room temperature”. If you serve a wine too cool, the flavors will all be hidden; if you serve wine too hot, all you can taste is the alcohol. According to a local wine shop: Red wine goes in the fridge one-half hour before serving (it will warm up just right cradled in your hands). Whereas white wine, if it has been stored in the refrigerator, gets pulled out 30 minutes prior to serving so that it is not too cold.
