Turkey Stock

Remember: instead of throwing it away, the carcass and bones from your roasted turkey will make a delicious stock. As a alternative to always using chicken broth, try using the stock from your turkey in some of your favorite soups and sauces. Some tricks:

– Do not let the broth come to a hard boil. Meats release proteins and fat as they cook. If the liquid is boiling, the broth gets clouded and and may have a greasy flavor.

– Do not add too much water to the pot. You only need to add enough water to just cover the meat and bones.

– Let it simmer for at least a few hours to get a nice, rich flavor.

Try using the turkey stock with your bird’s leftovers for this weekday meal.
