A Sweet Ending
Whether you have passed the pie making on to an expected guest, called a baker that you love, or have decided to make your own - to go totally "over the top", you could serve your pie slices with a scoop of homemade quince ice cream. This version can be made a day in advance and does not require a custard base. If you saved the poaching liquid from the quince and apple crumble we posted a few weeks ago, it can be used in this recipe. Whole slices of poached quince would also be deliciously good served alongside as well.
Recipe: Quince Ice Cream
Tip: Pumpkins, pears, sweet potatoes, quince, apples, and pecans, are all in season. Any of these would make a delicious pie. Remember, pies can be made a day ahead and refrigerated. Pull them out of the refrigerator 1 hour before serving. Or, if you are short on time, a good old-fashioned crumble is delicious too.
