If you are frying tonight for Hanukkah, good technique can determine whether your food turns out brown and crispy or just greasy. Based on lots of experience and a little research, here are a few basic frying tips to follow:
- The oil must reach a good, hot temperature, but not smoking, to brown the exterior of the food quickly. Do not place latkes (or any other food you are fying) in the pan before you have given the oil time to heat up. This also applies to adding more oil as you cook.
- Do not overcrowd the pan. This causes the temperature of the oil to go down.
- Let finished foods drain on a paper towel. They will stay crisp. Also, keep foods warm in a preheated 200 degree oven, if needed.
