Squash Blossoms Stuffed with Goat Cheese

This recipe is from Whitmore Farm. It was loosely jotted down while shopping.

About 8 squash blossoms
1 sm. package of goat cheese
1 sm. onion or half large, grated on a box grater
2 eggs
Panko bread crumbs

Gently clean squash blossoms by running under a little cool water. Let dry on paper towel. In a bowl mix goat cheese, onion and one egg. Place mixture in a large plastic bag and cut a whole in the corner to make a piping bag. Open squash blossom and pipe some of the mix into each flower. Close top. Beat another egg in a small bowl and thin with a little water. Place the mixture on a small plate. Place about 1 cup panko on a small plate. Roll each blossom in the egg wash, then the panko. Fry in a pan with a little oil until just brown.
