We recently discovered a new take on a forgotten ingredient, smoke-dried tomatoes. Remember the 80′s when sun-dried tomatoes were the popular, big-hit ingredient? It’s been a while since we cooked with them, but when we opened a box from Boggy Creek Farm to discover this wonderful smoky version, we wanted to cook with them right away. The tomatoes can be eaten out of hand as a snack or rehydrated and added to any cooked foods (greens, pesto, scrambled eggs, pasta or infused in oil). Don’t wait for winter to enjoy them; they are delicious now.
