This recipe, adapted from Tasty: Get Great Food on the Table Everyday, can be used for finger-food, a main dish, and it also works for potluck.
Serves 6 for dinner.
2 lbs. extra-large shrimp, peeled and deveined
2 Tbls. olive oil
1 Tbls. chopped fresh basil
Salt and freshly-ground black pepper, to taste
1 lb. sliced bacon, each slice cut into 4 pieces (vertically)
3 Tbls. maple syrup
2 Tbls. ketchup
2 tsp. soy sauce
Soak at least 12 bamboo skewers (for dinner), or 40 plus toothpick (for appetizers) in water for at least 30 minutes.
Toss shrimp with oil, basil, salt and pepper.
Wrap each shrimp with a quarter piece of bacon; spear it on a skewer with 4 or 5 shrimp each. Or, spear with a toothpick for finger food. This can be prepped hours ahead of time and then placed in the fridge until ready to cook.
Preheat a grill or oven broiler.
Combine maple syrup, ketchup and soy to make a basting sauce. Brush shrimp on all sides with sauce and grill or broil until bacon is crisp and shrimp are cooked.
