You receive the invitation and then notice the words “It’s a potluck”. Relax. Potlucks are meant to be informal gatherings and the objective is to simplify the meal planning. The origin of the word, tracing back to the 16th century, references the "luck" of unannounced guests who arrived hungry; and, since no special meal had been planned, they ate what was in the family pot. But, by the late 19th century, the word had evolved to mean a meal comprised of contributed dishes.
Recently, on a trip to the river, a group of us each brought food to share. There was a whole roasted salmon fillet coated in chives, curried chicken salad, two big bowls of leafy greens -each dressed and accented differently, rice pudding, homemade iced tea, fresh Middle Eastern flatbread, and a variety of delicious dips. One dish, however, stood out amongst the rest and we want to pass it on to you.
