So far, this year has been the year of the roast chicken. But, before you grow tired of this subject, we are passing on one tip we recently learned that we love knowing.
Tip: Place thick slices of baguette, french or crusty bread lightly tossed in olive oil directly under the roast chicken in the pan before roasting. The bread will absorb the juice from the chicken and, when cooked it will become crispy too. Serve it as a side or cut into croutons for a delicious roast chicken bread salad.
