Rice with Dill and Cardamom

This is a nice way to prepare rice for the family or for entertaining. We use brown basmati rice, but you can use white if you prefer.

2 c. basmati rice (white or brown)
3 Tbls. vegetable oil
3 whole cloves
4 cardamom pods
1 sm. onion, finely chopped
2 tsp. kosher salt
1 tsp. garam masala
¼ c. finely chopped dill
2 ¾ c. water
1 c. fresh or frozen peas (optional)

Put rice in a bowl and wash well in several changes of water. Drain. Put oil in a heavy saucepan and turn to medium-high. When oil is hot, put in cloves and cardamom pods. Stir for a few seconds. Add onion. Stir again until it starts to brown. Add rice, salt, garam masala and dill. Stir for a few minutes and then add water. Bring to a boil, cover tightly, turn the heat to very low and cook for about 20 minutes. Add peas, if using, then cover and cook for another 5-7 minutes.
