We had a creamy Indian chicken dish from a local restaurant that was so good we had to order more. We then pleaded with the owner for the recipe. Turns out, it’s an adaptation from Quick and Easy Indian Cooking by Madhur Jaffrey, one of our all-time favorite Indian home cooks. We are constantly asked to pass on quick and easy weekday meals. This is a good one, if you are tired of the same old thing. And, even children will like it, as it’s a milder version of curry.
Tip: For Indian cooking, some effort does have to be expended on having a well-stocked pantry. The essentials: basmati rice, black pepper, cardamom (ground), coriander, cayenne pepper, cumin (whole and ground), fennel seeds, garam masala, cinnamon and tumeric. After that, it’s mostly chopping and stirring.
