Pure Simple Cooking by Diana Henry is a cookbook to get. It is easily organized, soft-cover, and the photographs are mouth-wateringly beautiful. You’ll be inspired over and over, with her mix of recipes and writing: lots of ideas for stuffings, “a great way to turn plain meat into something special”, sauces, salsas and relishes for chops and more, “easy to whip up and behave well after you make them,” and no-cook desserts, “better than any slaved over pastry”.
Ms. Henry is a food columnist in the UK and has authored five cookbooks, including Crazy Water Pickled Lemons, which we also featured here at Loulies. She writes, “Finding ways of cooking that involve no more than 15 minutes at the kitchen counter (though the meal may take longer to cook) has made me more creative: I have looked again at what I can do with a jar of tahini, a can of anchovies, or a bag of pears. It has also made me more sociable. I can have friends over for dinner mid-week (even with a job and two children) and not end up frazzled.”
