The President who wouldn’t eat anything “green” or “wet” is being replaced by one who likes his meals “straight from the garden”. So, it’s not surprising to hear that healthier eating for all Americans is likely to be on the Obama agenda and that an organic “victory” garden will be planted on the White House lawn.
During World War I and World War II, Americans were encouraged to grow Victory Gardens to help support the war effort. Millions of people planted gardens and emphasis was placed on making gardening a family or community effort — not a drudgery, but a pastime and a national duty. Today our food travels many miles from farm to table and the process of planting, fertilizing, processing, packaging, and transporting food uses a great deal of energy. Perhaps now is the time to start thinking about renewing an old practice.
