Serves 2
4 sm. beets (2-in.)
2 Tbls. rice vinegar
2 Tbls. mint, chopped
2 Tbls. hazelnut or good olive oil
1 tsp. sugar
2 oz. goat cheese, crumbled
fresh chives, chopped (for garnish)
Preheat oven to 350 degrees.
Line a small rimmed baking sheet with foil. Place beets on sheet and sprinkle lightly with water. Cover tightly with foil. Bake until beets are tender when pierced with fork, about 40 minutes. Let cool. Peel beets. (Can be prepared 1 day ahead and refrigerated, sealed overnight).
For Dressing:
Whisk vinegar, mint, oil, and sugar in a small bowl.
To Serve:
Using a mandoline [1], cheese slicer, or sharp knife, slice beets very thinly. Slightly overlap slices on plate(s). Season with salt and pepper. Drizzle dressing over beets. Sprinkle with chives and goat cheese.
