Homemade Muesli

This recipe for an unbeatable breakfast is full of nature’s rock stars. The nuts and seeds have tremendous amounts of nutrients including magnesium, vitamins and unsaturated fats. The oats and seven-grain cereal provide healthy carbs, which studies show can improve endurance when eaten a few hours before exercise. Yogurt improves digestive and immune health, and it also contains calcium to help combat stress fractures.

Homemade Muesli

Serves 2-3

3/4 c. organic oatmeal
3/4 c. seven-grain cereal (such as Kashi)
1/4 c. dried plums or apricots (cut into small pieces)
2 Tbls. unsalted mixed nuts
1 Tbls. shredded coconut
1 Tbls. pumpkin seeds
1 Tbls. sunflower seeds

Combine all the dry ingredients together in a big bowl. Then transfer to smaller serving bowls and top with plain yogurt and honey.
