Fresh Mint Granita

Granita is a coarse, Italian-style flavored ice. This wonderful palate cleanser is a refreshing treat to make with all that extra garden herb! Consider offering a delicious dark chocolate bar divided into serving size bits along with this

2 c. water
1 c. fresh mint leaves, chopped
1/2 c. sugar
2 Tbls. fresh lemon juice
Fresh mint leaves, for garnishing

Bring water, mint, and sugar to a boil in a saucepan, stirring until all the sugar is dissolved. Reduce heat and simmer, uncovered, for 3 minutes. Add lemon juice and pour through a fine-mesh sieve, pressing hard on solids and discarding them, then cool.

Freeze mixture in a shallow nonreactive metal container, stirring and crushing lumps with a fork every 30 minutes, until evenly frozen, for 2 to 3 hours. Scrape with a fork to lighten texture, crushing any large lumps. Spoon into glasses or bowls and garnish with fresh mint leaves.
