Mango Ice Cream with Caramelized Mango

This is a delicious ice cream that gets its unique texture from the caramelized mango.

About 1 quart

Ice Cream
2 ripe mangoes, chopped
zest and juice of a lime
1/2 c. sugar
1 Tbls. molasses
1/4 tsp. salt
2 c. heavy cream

Caramelized Mango
1/3 c. sugar
1 mango, peeled and diced into large pieces

For the Ice Cream: Puree the mangoes until smooth. Add the lime zest, juice, sugar molasses and salt. Process again for a minute to dissolve sugar. Pour the puree into a large bowl and whisk in the cream. Place in your frozen ice cream base and turn on your ice cream maker.

For the Caramelized Mango: Place sugar in a medium-sized skillet and cook over medium heat, until it turns dark brown. Add the diced mango and keep cooking until the caramel dissolves. Place in a bowl and let cool.

Once the ice cream is just about frozen, stir in the caramelized mango. The ice cream may melt a bit, but just place the base in the freezer until it is firm again.
