Adapted from Simply Mexican by Lourdes Castro. The cream used to garnish many dishes in Mexico is slightly sour and a bit salty. It is not simply sour cream, it is more like creme fraiche. Here is a homemade version that adds texture and helps neutralize the spice of the chilies in Mexican food.
1 c. sour cream
1 c. heavy cream
1 tsp. salt
Mix all ingredients in a bowl and cover. Let come to room temperature before serving. It can also be made, placed in a air-tight container and refrigerated.
