Grilled Peaches

Serves 6

Halve, pit, and slice six ripe peaches. In a large bowl, toss peaches with 1 vanilla bean (or one teaspoon vanilla extract), 1 Tbls. chopped crystallized ginger, and 1 heaping Tbls. each unsalted butter, honey and orange liqueur (such as Grand Marnier). Place on a large (16″ x 12″) piece of heavy-duty aluminum foil and seal tightly (leaving a little wiggle room for the contents to move inside the foil package). Grill over a medium-hot fire for 8-10 minutes, jostling gently a couple of times to keep contents from burning.

Serve over vanilla ice cream.
