Black trumpet mushrooms
Good olive oil
Sea or Kosher salt and freshly ground black pepper
Fontina Cheese, sliced
White truffle oil
Two 1/2 -in slices of fresh-baked Pullman (white sandwich) bread
Heat small fry pan over medium-high heat; adding just enough olive oil and butter to coat the pan. When hot, add mushrooms and saute until soft. Remove from heat; add salt and pepper to taste.
Layer cheese and mushrooms on one slice of bread and drizzle truffle oil over these. Place second slice of bread on top and press down, using your hand, to slightly flatten sandwich.
Using same pan (conveniently pre-greased with olive oil and butter), over a medium high heat, carefully place sandwich into pan and cook until golden brown on both sides. Slice on a diagonal to serve.
