Fresh sausage should be grilled slowly to prevent the casings from splitting open and the sausages from becoming too dry; this allows the juices to really plump them up. To grill better sausage, first oil the grill grates by wiping them with a cloth moistened with vegetable oil so that the sausages do not tear or stick. Prepare a medium fire and grill, turning them every couple of minutes to ensure even-temperature cooking. They will take about 15 minutes. Just before taking them off, turn up the heat a bit (or place them directly over coals) to brown. For a complete meal, grill with potatoes, peppers and onions too.
