Garlic Scapes – Don’t Blink or You’ll Miss Them

Garlic plants put off a tall, thick flower shoot. The scapes are the flower stems that the plants produce before the bulbs mature. Gardeners snip this topset off to ensure and push the plant’s energy toward bigger and healthier bulbs. When harvested while they are young and tender, the scapes are delicious. Try making a delicious bright green pesto perfect for topping crostini (essentially like a garlic bread) and also tossed with pasta.

Also: These garlic topsets are marvelously whimsical as well; as it grows it curls into a circle. Their curvy forms look wonderful in a vase and used as decoration.
