Garlicky Potatoes, Smashed and Roasted

Serves 6

1 1/2 lbs. new potatoes, cleaned
Kosher or sea salt
8 or more cloves garlic, peeled
Olive oil

Preheat oven to 425 degrees.

Bring a large pot of salted water to boil. Add potatoes and cook until just tender. Drain. Return to dry pot. Add garlic cloves. Using a wooden spoon or muddler, smash the potatoes and garlic until they crack and split. Note: you can do this bit ahead of time and just leave in them in the pan with the lid off until you’re ready to roast them.

Pour oil into a roasting pan and place in the preheated oven to heat up for 10 minutes. When oil is good and hot, very carefully pour potatoes and garlic into pan, give it a good stir, and cook for about 15 minutes.
