A Better Burger

We thought we couldn't learn anything new about making a hamburger. But, our friends Lou and Ian taught us this trick: Add one large finely diced onion (we're using Vidalia, because they are in-season right now) to about two pounds of fresh ground beef, a big pinch of salt and two generous grinds of pepper to make a super-simple, but really good burger. Cook on a hot grill for about 3-4 minutes per side (medium-rare). Place a little butter on each side of potato or Kaiser rolls and toast on the grill until brown. Serve with iceberg lettuce (yes, iceberg!), sharp cheddar cheese, bacon and tomato.

Weekend Menu: Put out the pickles, a big bag of chips, invite a crowd, and don't forget the kickball. For sides or potluck, try Watermelon, Feta and Black Olive Salad or Fennel Slaw. For dessert, serve Ice Cream Sandwiches.
