Marinated Farmer's Cheese

This looks great on the table served in simple glass jars. Sop up the bits with delicious, home-baked bread, add to salad plates, serve with sliced, ripe tomatoes, use to top on home-baked pizza, or use the marinated oil to drizzle over pasta, potatoes, or just-cooked veggies.

1 lb. farmer's cheese (sold in supermarkets), cubed in 1/2"-1" pieces
2 heaping tsp. capers (large or small)
4 tsp. whole black peppercorns
4 cloves garlic, thinly sliced
Extra-virgin olive oil

Place first four ingredients in glass or mason jar. Drizzle olive oil over to cover. Let marinate in the refrigerator for at least 2 days before serving. Serve at room temperature.

Alternatively, try using feta cheese instead of farmer's. Add fresh herbs such as rosemary, thyme, bay and/or sage. Sprinkle some dried red chile flakes and a few grindings of black peppercorns. Then add oil.
