Wild Summer Purslane - Weed it or Eat It?

Although considered a weed to most, on the farm or in other countries, purslane is considered a food. It is a leafy green that can be eaten raw in salad or sauteed like spinach, and its popularity is growing. What's to like: it contains more omega-3 fatty acids than any other leafy vegetable and has a slightly salty, tangy flavor that is so succulent, we can't stop eating it mixed in salad. We've even grilled purslane as a side to steaks just off the barbecue.
