We often avoided this favorite ingredient not because we didn’t like it, but because we didn’t want to open a can only to use one or two peppers – throwing the rest away. Here’s a tip so that you can have these on-hand whenever you need them and don’t have to let them go to waste:
Tip: Simply freeze the leftover chipotle peppers, slightly separated, on top of a baking sheet covered with wax paper (an hour’s generally enough) and then transfer them to a freezer baggie or a small container. The next time you need them, just use the amount you need and return the rest to the freezer. No more wasted peppers.
