Cardamom is a member of the ginger family and is often used in the baking of Scandinavian and East Indian dishes. Each pod holds a cluster of black, highly aromatic seeds that give a warm, spicy-sweet flavor to food. It is often called the “vanilla of India” as it is used in most desserts, added to spiced tea, and sucked as a mouth freshener. Cardamom can be purchased either in pods, as seeds, or ground. The ground cardamom is not as full-flavored because the seeds begin to lose their essential oils when crushed, but, if you do not have a mortar and pestle), it works just fine. Be frugal when using- a pinch of this spice goes a long way.
