What to make when an unexpected guest stops by? Beluga lentils. The smallest of the lentil family, they are shiny black in color and are very quick to cook. Not overwhelming, these earthy “pearls” are a great vehicle for other flavors as well.
You can find them in markets dried, or we love them pre-cooked from Trader Joe’s. Keep them in your pantry to have on-hand when company calls. They are the perfect garnish for this wonderful teaser.

Tip: Lentils cook more slowly if they are combined with salt or acidic ingredients, so add these last, when they are just tender and almost ready to drain.
