Basic Sesame Noodles

Eat these noodles plain or top with salmon for a full meal. They are also delicious served cold for breakfast or packed for lunch – kids love them.

Serves 4

1 package Lo Mein or Udon noodle
6 Tbls. soy sauce
3 Tbls. rice vinegar
1 tsp. red pepper flakes (or less to make them a bit less spicy)
1 Tbls. brown sugar
2 Tbls. sesame oil
2 tsp. fresh ginger, grated
toasted sesame seeds (black or regular)
chopped scallions and cucumber as garnish (optional)

In sauce pan, combine soy, vinegar, red pepper flakes, sugar, sesame oil, and ginger. Bring to boil and simmer for about 5 minutes. Let cool. Cook noodles following directions on package. Rinse under cold water and drain well. Place noodles in a bowl and toss with the sauce. Drizzle a little more sesame oil on the noodles if needed, and top with sesame seeds and garnish.

Double the recipe for more noodles.
