This is one of our favorite summer salads. The combination of ingredients is truly fantastic:
1 sm. red onion
3 limes
1/2 of one watermelon
8 oz. feta cheese (or slightly more)
one bunch flat-leaf parsley
one sm. bunch fresh mint
4 Tbls. good olive oil
1/2 c. pitted black olives
Freshly ground black pepper
Cut red onion into very fine slivers (in the shape of half-moons), place in a bowl with lime juice. Steep.
Cut watermelon into about 1-inch chunks, cut feta into similar-sized chunks, and place in a large wide bowl. Tear off parsley leafs and sprigs, chop mint, and add to bowl. Add lime and onion mix, olive oil, olives, and a good grinding of black pepper. Use your hands to toss salad gently. Taste. Adjust seasoning, if necessary.
