When making bacon, instead of pulling each piece apart and meticulously lining the pan, drop the entire slab in a heavy skillet (we prefer cast-iron), turn the heat on to medium and watch the bacon fall apart as it cooks. Occasionally move the strips with a fork to evenly cook and separate any pieces that remain together. The bacon cooks in approximately 15-20 minutes and comes out absolutely perfect.
