We must divulge that, as an experiment, we took the risk of making a meal for 10 in less than half an hour and it worked — Italian Meatball Soup Rapido! Since that supper, there has been much lobbying for the recipe. We now disclose the truth.

Each month, Gourmet magazine has a feature titled “Ten-Minute Mains” – fast food at its best. These are quick, easy, and excellent weekday recipes that often suggest buying pre-made items (i.e., the meatballs and chicken stock in this soup). The success of this soup is true Parmigiano-Reggiano – one of the most imitated food products in the world.

No matter how fast the food is to prepare, good food requires knowing when to choose the appropriate high-quality ingredients — or, the resulting creation may suffer.
